Guinness Chocolate Cake with Baileys Cream Cheese Icing

As I gear up to write up this introduction I can’t help but sigh. I miss traveling, and subsequently, Guinness cake reminds me of Ireland. COVID-19 has certainly stunted certain trips, and although I am not exceptionally well traveled, I have been to Ireland and Canada, and would recommend both with zero hesitation. Both countries are gorgeous, especially Ireland, but even more appealing is the kindness of the people. For the Irish, perhaps we can blame their kindness on their comforting food and drink—it warms the soul—which is exactly why this Guinness cake is special.

What can be expected from this cake? It’s flavorful, with a whole cup of Guinness, and it has a warmth in taste, that doesn’t overwhelm the chocolate. The Baileys cream cheese icing is smooth, creamy and not too sweet—with a boozy kick of course! The texture is rich, moist and boasts a fudge like texture, and because there is a larger liquid to flour ratio—it’s reminiscent of a mud pie consistency, that is oh. so. yummy!

This cake is easy to make and following a few guidelines will produce a perfect cake. Tips and tricks are as follows.

All Purpose vs. Cake Flour

I’m frequently asked, “why use both cake and all-purpose flour in your recipes?” It’s true, in most of my cake recipes I use a combination of both flours. I landed on this technique after a lot, and I mean a lot of cake testing. When testing with just cake flour, it wasn’t right, often yielding a cake crumb that was too light, and the texture didn’t allow for that tender, yet substantial bite we all crave when eating a decadent slice of cake. Similarly, using just all-purpose flour wasn’t a perfect fit, often yielding a heavy crumb that was reminiscent of a bread or a muffin. Using both flours creates a cake that is light, tender, moist, but with enough bite that it feels satisfying, aka the perfect slice of cake.

I’ve been asked, “is cake flour hard to find?” No, I purchase my cake flour from Nob Hill or Safeway in the baking isle next to the flour—it often comes in a small box. Since my cake recipes usually split the two flours, a small box lasts for many bakes. It is truly my advice, that if you enjoy my recipes, use both flours as recommended. It does make a difference, and in case you’re wondering, most bakeries use cake flour for their cakes! I will be honest, that although my recipes are relatively easy and attainable, my goal isn’t simplicity, it’s to provide recipes as good as a bakery.

Properly Measuring Flour

Many seasoned bakers recommend weighing ingredients for optimal accuracy—this isn’t bad advice. I do have a scale, and for macarons, and other delicate pastries, I do weigh ingredients. But for cake, I find spoon and leveling the flour a sufficient technique. Simply, fluff the flour gently, and using a spoon, spoon the flour into the measuring cup, and once it’s domed over the measuring cup, simply scrape away the excess flour with a knife, back into the bulk flour. Why is this important? Too much flour is a nasty culprit of many baked goods going array, creating heavy, dense and dry bakes. Measure the flour correctly, and this creates a whole new world of baking, yielding light desserts that are delicate and delicious.

Final Tip

Once pulled from the oven, the two cake layers may slightly sink while cooling, and that is okay. After googling Guinness cake on the internet, I found most recipes use sour cream, and while I love baking with sour cream, I typically recommend this ingredient for coffee cake, muffins and pancakes, not for a light fluffy cake. After lots of testing, trusting my gut and creating a non-traditional recipe was the right call. As a result, my Guinness cake is unique in using ingredients like half and half instead of what is typically sour cream, leading to a delicate crumb. But because of these tasty adjustments, and the liquid to flour ratio, there is less gluten, meaning the cake could slightly sink when pulled from the oven. But don’t fear! This is easily covered up with icing and the lucky individual enjoying the cake will be none the wiser.

Lastly, as pictured, this cake is meant to be decorated with a rustic design—typically a semi naked cake. To achieve this look, once the cake is baked and cooled, carefully wrap the two layers in saran wrap, and place the layers in the fridge to cool—typically one hour. Once cooled, layer the cakes—cake, icing, cake, remaining icing. Bring the icing to the sides of the cake after smoothing it over the top. Using a back and forth motion, cover the cake with remaining icing. Once the cake is properly covered, using a bench scraper (also known as cake smoother), with your dominant hand, hold the scraper steady against the cake at a slight angle, and slowly move the turn table with the other hand, not moving the scraper, and keeping it as straight and steady as possible. As excess icing builds on the scraper, place it back into the mixing bowl, and continue smoothing the cake with a clean scraper. Because I intended this cake to be semi naked, I don’t require a crumb coat, but instead, I scrape away the icing, revealing a bit of the crumb underneath. See pictures for reference. This technique is called a semi naked cake.

The best part? There is no wrong way to decorate a cake, so have fun and enjoy every bite, as i’m confident you will.

An 80-year-long career in Hollywood

«It’s incredible that I’m still in this business and that you are still putting up with me,» White said in an appearance at the 2018 Emmy Awards ceremony, where she was honored for her longevity.

«It’s incredible that you can stay in a career this long and still have people put up with you,» White said. «I wish they did that at home.»

The estate was named after the Holy Well of the same name. Lands were purchased over time by the Guinness family to build up an extensive property. In 1837, Elizabeth and Benjamin Lee Guinness commissioned St Anne’s House, a large Italianate-style residence known locally as “The Mansion”, and it was modified over several generations. [1] The Italianate influence included references in the garden follies to ancient Roman sites and the import of actual antiquities.

In 1868 Elizabeth and Benjamin’s son, Sir Arthur Edward Guinness (Lord Ardilaun), inherited the estate and also purchased Manresa House next door. [2] He was the person most responsible for expanding and developing the estate and gardens and planted wind-breaking evergreen oak trees (Quercus ilex) and pines along the main avenue and estate boundaries, where they remain. Lady Ardilaun, originally of Bantry House, County Cork, developed the gardens based on her interest in French chateau gardens, but also with eclectic influences of the Victorian era and the horticultural expertise of her Scottish gardener. Lord Ardilaun was also prominent in the Royal Horticultural Society.

Lord and Lady Ardilaun had no children and the estate passed to their nephew Bishop Benjamin in the 1920s. In 1937, he decided he could no longer maintain such a large estate and negotiations with Dublin Corporation resulted in the house and 444.75 acres (1.80 km 2 ) of the estate being sold to the Corporation for approximately £55,000 in 1939. [1] Bishop Plunkett retained Sybil Hill as a private residence with 30 acres (120,000 m²) of parkland, and it was later sold to the later became the site of St Paul’s College, Raheny. In 1952 St. Paul’s College acquired an additional 14 acres of Corporation lands, behind their school, to use as school playing fields. During the Second World War, Dublin Corporation encouraged local residents to grow vegetables in allotment gardens in the estate.

In December 1943, the main residence of St Anne’s was gutted by a fire while being used as a store by the Local Defence Force; the ruins were demolished in 1968. [1] In the meantime, just over 200 acres (80.9 ha) of the estate were developed for public housing with the central and most attractive portion comprising about 240 acres (97 ha) retained as parkland and playing fields.

‘Dynamite’ Showed Dynamic Results

Record – Most Week on the US Hot 100 by a Kpop Track

Dynamite is the first English track by BTS band, which spent 32 weeks on Billboard’s all-genre Hot 100 chart. Finally, in 2021, it earned the title for most weeks on the US Hot 100 by a Kpop track. It was not all. The song had global hot led the chart for three weeks which was 5 September 2020 to 12 September 2020 and 3 October 2020.

Afterward, Dynamite roomed in the top two for seven weeks and followed in the top 10 for 13 weeks. Thus, Dynamite secured its place on the chart while being in the top 50 since its No. 1 debut on 5 September 2020.

The amazing result by BTS’s Dynamite left in 2021 with topping another global chart. BTS had released Dynamite in 2020, which surpassed the summer hit song Despacito by Daddy Yankee, Luis Fonsi, and Justin Bieber, with most weeks at No. 1. And thus, since 10 April, the South Korean boy group BTS’s track spent 18 non-consecutive weeks at No.1 on Billboard’s Digital Song Sale Chart. Finally, BTS’ Dynamite won the crowned record title from Fonsi’s 17-week No.1 summer hit.

Another achievement secured by the band on Spotify in 2021. The South Korean group BTS earned the record for most-streamed act on Spotify (group) in April 2021, which was previously received by the British band Coldplay. It was revealed at the time of the announcement that BTS’s music had been streamed 16.3 billion times on Spotify, which is a huge success for the group! At the time of writing, the group’s track Dynamite has been played over 1 billion. It is not even surprising that BTS is listed in the top 3 of Spotify’s World Most Streamed Artist of 2021!

Grammy’s Night Charmed By BTS

The powerhouse of the South Korean music industry, BTS, secured the record for most Nickelodeon Kids’ Choice Awards won by a Music Group in March 2021. The group achieved a total number of five wins during the event. With earning the title, BTS shares this record with Fifth Harmony (USA), who had received their fifth award at the 31st edition of the event in 2018.

Dynamite , Butter , and Permission To Dance also made it to the top on the Billboard Global 200 Chart In July 2021.

Record – Most Followed Group on Instagram

BTS is the most followed group on Instagram after raking up the astounding number of 58.3 million dedicated followers. Previously the crown was with the British band One Direction, which passed down to the Bangtan Boys of South Korea whenever the band rose to fame or joined the platform. While the boys break records, ARMYs do not hesitate to raise their voices to let the world know that after taking over Twitter and Tiktok, the septet can also count on a colossal following on Instagram!

Record – Fastest Time to Reach 1 and 10 million followers on Instagram

The group also broke new records, once again, in December 2021 after the band set their Instagram accounts to the public. BTS’ member Kim Taehyung, known by his stage name V, in particular, started gaining followers and earned record after record. It includes the Fastest time to reach 1 million followers on Instagram, which was attained in only 43 minutes, and the Fastest time to reach 10 million followers on Instagram, which was achieved in a little under 5 hours.

BTS has embarked on a new journey in 2022. Just all those mentioned records, awards have brightened the group’s path, the future will be more dazzling. After all, BTS and ARMYs will continue walking down this path together!

  • 3½ to 4 Pounds boneless beef chuck-eye roast, trimmed and cut into 1½-inch pieces
  • 1 Tablespoon salt
  • 2 Tablespoons vegetable oil
  • 2 yellow onions, large chop
  • 2 garlic cloves, minced
  • 1 Teaspoon minced fresh thyme
  • 1 Tablespoon tomato paste
  • ¼ Cup all-purpose flour
  • 1 Tablespoon fresh thyme leaves
  • 3 Cups chicken stock
  • 12 Ounces Guinness Draught, divided
  • 1½ Pound Yukon Gold potatoes, peeled, large chop
  • 1 Pound carrots, peeled and large chop
  • 1 Pound turnips peeled and large chop
  • 1 Pound celery washed and large chop
  • 2 Tablespoons chopped fresh parsley

Adjust an oven rack to the lower-middle position and preheat to 325 degrees F. Season the beef with salt and freshly ground pepper.

Heat the oil in a Dutch oven over medium-high heat, add the onions and salt, and cook, stirring occasionally, until well browned, 8 to 10 minutes.

Add garlic and thyme and cook for 2 minutes.Add the beef and brown slightly.

Whisk in tomato paste, chicken stock, ¾ cup of the Guinness and the remaining thyme scraping up any browned bits on the bottom of the pot. Bring to a simmer and cook until slightly thickened, about 3 minutes. Continue to a simmer.

Transfer the pot to the oven and cook, uncovered, for 90 minutes, stirring halfway through cooking.

Stir in the potatoes, turnip, celery and carrots and continue cooking until the beef and vegetables are tender, about 1 hour, stirring halfway through cooking.

Remove the pot from the oven and stir in the remaining ½ cup of Guinness and the parsley. Season with salt and pepper to taste and serve.
